Coffee Case File 028 Status: DECLASSIFIED

What’s up Co-Conspirators! 

Our 3rd drop of 2025 has been declassified. Case File 28 is a single origin washed coffee from Nariño Colombia. Nariño is well known for naturally sweet complex coffees.

This coffee immediately stood out to me; strawberries, creamy vanilla, sweet cinnamon. It’s a dense, sweet, clean cup. A perfect representation of what Nariño can do. 

I used to lean really hard into natural and anaerobic coffees but over the past year I’ve been hooked on super clean washed coffees because they let the beans true character shine. Roasting them is all about bringing out the natural terroir - the unique flavors of the soil, climate and region without anything getting in the way or manipulating it. 

I recommend espresso or pour over for experiencing this coffee. It’s proof that washed coffee isn’t boring.

Tablon de Gomez, a renowned coffee-growing area in Nariño, Colombia, has seen significant improvements in quality of life due to coffee production. To reach it, travelers fly to Bogota, then take a local flight to Nariño and a 2-hour pickup ride along muddy roads. The community has a strong tradition of ecological protection, preserving forests, native plants, and waterways. Coffee producers are aware of climate change and its impacts on their community.

They primarily focus on coffee, intercropping with shade trees like avocado and lemon, and raising free-range animals whose manure benefits the ecosystem. The coffee-growing region is between 1750 and 2000 meters above sea level. Years ago, the community struggled with low productivity, relying on peanuts and corn. The shift to coffee and the introduction of fertilizer have greatly improved both their finances and ecological practices.

Tablon de Gomez has a culture of peace and neighborly respect. Each August, the community celebrates San Ezequiel, their patron saint, with a festive gathering at every house.
