Our first release is a Banger!
We got our hands on a Gesha from Ethiopia that has undergone Carbonic Maceration. Carbonic maceration, borrowed from the red wine world, is a fermentation process where whole coffee cherries sit in a CO₂-filled tank, pushing out oxygen and breaking down sugars over days or weeks. Popularized by a 2015 barista champ, it crafts an intense, fruit-forward, aromatic cup. 

This coffee is a perfect representation of what happens when coffee collides with Science. Intense strawberry sweetness, balanced kiwi fruit acidity and delicate florals on the finish. I recommend highlighting this coffee as a pour over. V60 is always my go to. Refer to the Scott Rao method and you cannot go wrong.

Nestled in the heart of Ethiopia's Omo Valley, the Gori-Gesha variety is a revered treasure in the coffee world.

This coffee, sourced from Tracon Farm, sits at altitudes between 1400 and 1684 meters, benefiting from a warm climate distinct from other regions like Yirgacheffe and Guji.

This carbonic macerated Gesha is bursting with strawberry, kiwi, and grapefruit citrus, balanced by intense aromatics and layered sweetness.

With a delicate floral finish and lingering complexity, it pushes the boundaries of modern coffee.
